Yay! I made it half way! Although I should share that I've already planned to stick to a 99% raw diet until I reach my fitness goals, then I'll probably do 80-90% raw a la www.diaryofanutritionist.com. I really lover her approach. If I keep going at the rate I have been this past two weeks, I'll probably reach my goals in one to two months. We'll see.....
Well, my sweet potato chips turned out horrible. I'm pretty sure the problem is that my mandolin didn't get them quite thin enough (even though I used the extra thin setting). Sweet potatoes are a harder consistency than regular potatoes, I learned that when I began making sweet potato fries for my son. So I guess I'll put the sweet potato chips idea on the back burner for now. I could try them with regular potatoes but I don't feel there's a whole lot of nutritional benefit so we very rarely eat them.... maybe red potatoes? I can also try zucchini chips. Either way, back burner for now.
Thai coleslaw for dinner tonight. Yum...
